Summer Lunches for the kiddos
So I don't know about your kids, but my kids are so done with Turkey sandwiches. I don't blame them, if I could I would much rather eat someone else's salad than the one I made. So with that being said, I came up with some good ideas for your kids and mine this summer. I also decided recently to take gluten out of Ellie's diet. Apparently gluten causes inflammation in the body, especially the brain. A friend of mine, who happens to be a natural-path, said to me recently, " Erin, if you want Alzheimers, eat bread." That did it for me. Thank gooness there are so many wonderful alternatives and now they are really inexpensive.
Ideas:
Individual Pizza's- So yummy and a big hit with the kids. What kid doesn't like pizza? I found these good tasting english muffins that are gluten free. Pick your topping: Pepperoni, turkey pepperoni, canadian bacon, vegi..the list is endless. Dolup on some pizza sauce, sprinkle with your favorite cheese, bake in oven at 350 for about 7-9 mins and poof, you have got yourself a yummy lunch that your kids will eat up!!
I tried Tuna and made a tuna melt yesterday. Ellie and I ate it up so fast. She is my little garbage disposal though, so tread lightly with the tuna melt, it's not for everyone. Mark bocked at the smell. Men!
Tortilla wraps. We perfected these and they are way better than the MCD wrap. Your favorite tortilla, a layer of cream cheese, a couple slices of turkey meat or chicken strips. (when I am bbq chicken for dinner, I make extra for lunch), slices of cucumber, tomatoes diced and some lettuce. Sometimes I will change it up and instead of cream cheese, drizzle in ranch. The boys like bacon in it, I am not a fan. It sorta defeats the purpose of something good for lunch, but your call. All I know is that it's so good and I use gluten free tortialla's.
Hope this helps you out a little this summer. It has me so far. I am sure they will get bored with it by the end of summer and the standard Turkey sandwich will be top on their list again.
