Rock Fish Taco's...Cilantro-Lime Dressing
So with the weekend upon us, let's start it right with some yummy taco's. This recipe is so easy...Check it out and let me know what you think. Goes great with some spicy jalepeno margarita's.
I bought Gluten Free shells, and fried them lightly in oil. Then you take your rockfish, or I guess any white fish. I bought enough to feed 4 of us..you can double recipe for guests.
Recipe:
-Rock Fish or a white fish- you decide how much
-10-12 gluten free corn tortillas (you can use regular but I am trying to reduce or illimate gluten slowly from our diet)
-bunch of cilantro, washed
-1/4 of a cabbage head, sliced
-1/2 red onion
-dressing
Dressing
-cup of mayo
-1/2 cp of cilantro
-1 lime squeezed
-dash of salt, your discretion
stick it in your processor for a couple pulses and you get the dressing...you can add a little water for a more liquidy consistency
I put the rock fish on a sheet of foil, placed a little bit of butter on it and a couple dashes of salt and pepper. Fold the foil around fish so that it's covered up and place on bbq at around 350 or 400 degrees. The key to fish on the BBQ, is to not get it too hot, or it dries fast! Check frequently til you get that flaky fish you desire.
I sliced some cabbage length wise, a couple chunks of cilantro on each pile and a little bit of cut up red onion. I layered the tortilla first with the cilantro-lime dressing, then placed the fish, cabbage, onion and cilantro on top. So ooey, gooey yummy I can't even tell you.
