Challenge Day 3
I do look a little tired don't I? It's not lack of sleep, it's the sugar withdrawl look. It better get better....
So day 3 is complete. Whohoo. I am not gonna lie and say that the last couple days has been a breeze. Major hard to go to Cinetopia last night and not order a glass of wine. Oh well...life goes on.
The barre3 Thai soup I made Monday night was yummy..I will say it needed something. We decided it need more spice. I added some cheyenne pepper to it and some red pepper flakes. You may want to also not put quite as many mushrooms as it calls for...my kids even freaked when they saw that many shitakes floating around.
Here is my dinner tonight.... Melissa's Chicken Hash
2 tbs of cooking fat
1 pd boneless, chicken thighs, cut into 1 inch dices
1/2 tsp salt
1/4 tsp pepper
1/4 cup chopped walnuts
1 sweet potato, peeled and grated
1 granny smith apple, peeled, cored and diced
1/4 cp apple cider
2 handfuls or arugula or spinach
