Shrimp Linguine

I thought with the beautiful weather we are having in Portland, I would give you a good recipe for the weekend. This is another one of my easy recipes that everyone loves! How can anyone not like linguine ? Especially if you put gluten free noodles in. It's not a heavy pasta dish but will make you feel full. What I have been doing lately too, is using gluten free noodles. Easy to substitute and my kids and Mark don't even know.

Start with some good size, fresh shrimp. Rinse, peel and de-tail if you would like. I like to leave on the tail, gives it some bulk and I like to teach my kids to bite off the tail.

-One package of your choice of Lingine-gluten free is my first choice

-3/4 cup of virgin olive oil

-3-4 cloves of garlic, peeled and minced

-2 pounds of cooked, peeled and cleaned prawns

-a couple pinches of dried chili flakes

-2 large tomatoes of your choice, chopped

-1/4 cup of flat leaf parsley, chopped

-1/4 cup of mint leaves, chopped

-1/2 cup of arugula, chopped

-1 lemon, squeezed

-grated lemon zest from one lemon

-sea salt and pepper, as needed for taste. I have a tendancy to put a lot of salt in this dish.

Cook the linguine until al dente- I'll admit, I didn't know what that meant years ago when I first started getting into really cooking. My mother is the "Martha Stewart" of all moms- ( she made the best lunches growing up) but she preferred to not have us in the kitchen when we were little. It wasn't til I was married that I actually didn't feel intimidated in the kitchen. I over the years, then have learned some of the terms that come with cooking.

Al dente means, cooked just enought to retain a somewhat firm texture.

Meanwhile, heat half olive oil in a frying pan over med heat. Add garlic, prawns and chili. Cook, stirring, for a minute til prawns are heated thru. Stir in chopped tomatoes. Add the parlsey, mint, arugula, lemon juice and zest and toss together. Add the drained linguine, reamining olive oil and salt and pepper. Serves apx 4.

So good for a lite meal on a sunny day. My kids love it with a salad and of course, ranch dressing. Jack even dips his shrimp in the ranch, I have given up telling him no...atleast he eats it, right?!
