Easy Enchilada Casserole...

Another Pinterest find from my friend Sara and I. I don't know about you but I could eat Mexican food and Sushi every day. I love a good taco or chicken fajita. This recipe that we discoverd is my new go-to mid week or Friday night dish. It is so easy and so delish. It's also so great for the picky eater and it pairs well with my salsa recipe. It can me made ahead of time and put in fridge for later that evening or it can be doubled and made to take to a party. I happened to make it last weekend when we had our friends over and it was a big hit. Check out our video and see how easy it is to make and you will be hooked just like us!!

Recipe:

1 pd of ground hamburger or you can substitute ground turkey

1/2 cup of sweet onions minced or green onions, your choice

2 cans of cream of chicken soup

1/2 pd of swiss cheese and 1/2 pd of chedder cheese, grated

one can of green chilies, drained

one larger can of enchilada sauce, your choice on spiciness and brand

a cup of my salsa (see recipe in past blog posts) or your favorite salsa

6 flour tortillas stacked and cut into traingles like picture

one small can of sliced olives, drained

Cook hamburger and onion together, then put in bowl. Dump in all other ingredients except the tortillas and stir. Gently put in the tortillas, sorta like you are dealing cards and mix them into the bowl. Pour mixture into a 9x13 baking pan. Preheat oven to 350 and cook for 45 mins.

Garnish with sour cream and guacamole and of course my salsa! Enjpy!!!
