Easter ...Sweet Potatoe Casserole Anyone?
As Easter is approaching, I am seeing a ton of posts on "How to's "... Everything from basic egg decorating, to unbeliveble decorating ideas. I figure there is enough of that, so I am going to stick to what I know and tell you about my family's sweet potatoe recipe. It is a pretty coveted recipe (people go back for seconds and sometimes thirds for). I figure though, since I gave you my salsa recipe, I would reveal my sweet potatoe recipe. Ok, well, it's not really my recipe, it's my grandmother's shhhh, but it's ok, she doesn't read my blog :)
I must say I am not a big fan of the traditional Easter dinner. I will say though, that this will be the one thing I make for this Sunday..goes well with ham, that I refuse to eat any longer.. (long story ie, food poisoing). So, for those of you that are more the traditionalist, or for those of you that just want to try something different, you will be so addicted after making this and start bringing it to every Holiday dinner...Promise.
Recipe:
3-4 Medium Sweet Potatoes
1/2 cup Butter
1/2 cup light corn syrup
1 tsp Vanilla
1/2 cup Sugar
2 Eggs
Boil, Peel and Mash Sweet Potatoes, Add butter, corn syrup, eggs, vanilla and sugar and mix together. Pour into a greased 9x13 pan and top with:
1/2 cup of Flour
1/2 brown sugar
1/2 margarine ( softened) be careful to not melt the butter, it makes a funny consistency if so. You want it to look like coffee cake crumbling topping.
Bake at 350 for 25 minutes
